One of Maui's treasured restaurants is Nick's Fishmarket in the Fairmont Kealani Maui in Wailea. Since it opened its doors in 1998, Nick's Fishmarket has won numerous awards, including the revered Wine Spectator's Award of Excellence. Nick's Fishmarket has also won many other "bests" by local publications, such as "Best Special Occasion Restaurant" by the readers of Maui No Ka Oi Magazine.
Over the years, Nick's Fishmarket has been known for it's innovative, classic cuisine and fresh seafood. The accompanying wine list features vintages from Italy, France, Germany and California which are chosen to compliment the cuisine. I'm so pleased that Gene Sarmiento, Senior Executive Chef for Nick's Fishmarket, has elected to share their sublime recipe for Steamed Onaga with Pineapple Ponzu, Buckwheat Soba Noodles & Sizzling Peanut Oil:
STEAMED ONAGA
With Pineapple Ponzu, Buckwheat Soba Noodles & Sizzling Peanut Oil
INGREDIENTS
- 10 oz Onaga filet, skin on
- 4 oz buckwheat soba noodles cooked according to directions
- 2 oz Pohole fern shoots steamed
- 2 oz pineapple, thinly sliced
- 2 oz fresh hearts of palm, thinly sliced
- 1 oz green onion, thinly sliced
- 1 oz Kula onion, thinly sliced
- 1 oz cilantro chopped
- 2 oz cherry tomatoes, sliced in half
- 1/4 oz red jalapeno, seeded and diced
- 5 oz Pineapple Ponzu (see recipe below)
- 5 oz peanut oil
- Salt and peper to taste
Pineapple Ponzu
- 1 bottle Yuzu
- 2 cups dashi
- 2 cans pineapple juice
- 2 cups rice wine vinegar
- 6 cups Mirin or Sake
- 1 cup Yamasa Soy Sauce
METHOD
- Season fish w/ salt & pepper. Top fish with thinly sliced pineapple.
- Place fish in the steamer until done.
- Place 5 ounces of the heated ponzu in the bowl you'll be using for service. Add the soba noodles and top with the Kula onions, steamed fern shoots, then the fish.
- Mix cilantro, green onion, hearts of palm and jalapeno and place on top of the fish.
- Pour sizzling peanut oil over the dish.
