Embarrassingly enough, it took me years to embrace sushi.  I mean properly embrace it and love it with the passion I do now.  
 
Growing up here on Maui there were two kinds of sushi served at nearly every general store--maki sushi (a basic roll made with canned tuna) and cone sushi (still a favorite).  We'd get it at the store in Paia along with lumpia and our strawberry crushes for a day at Baldwin beach.  And while I loved cone sushi and lumpia, I wasn't really sure about the the rolls.  
 
Now I lament at all the sushi I missed over the years.  With Maui's abundantly fresh ahi, the sushi is just fantastic.
 
So imagine my delight when I stumbled upon the newly opened Miso Phat Sushi right here in Kahana.  They deliver and you can take out, but dinning in is a pleasure.  This small nook features two tables and a small sushi bar, so getting in can be difficult, but worth the wait.
 
Chef Ben Kim has been a sushi chef on Maui for over fifteen years, and his attention to detail and requirement for the freshest ingredients makes him one of the best sushi chefs in Hawaii.  I enjoy watching him prepare each roll as it is ordered, and especially love the spicy hamachi, made fresh to order.
 
His business partner Shawn Steadman has been in the restaurant business for twenty years, and his enthusiasm and joy in his relationships with his customers is quite evident.  
 
Ben and Shawn were kind enough to share their recipe for the iconic Rainbow Roll with us:
 

The Miso Phat Rainbow Roll

INGREDIENTS

  • Fresh Crab
  • Mayonaise
  • Lemon Juice
  • Sticky Rice
  • Nori Paper
  • Fresh Ahi, Salmon and Hamachi sashimi
  • Tobiko (flying fish egg caviar)
  • Scallions
  • Sesame Seeds
  • Shoyu
  • Wasabi

METHOD

  • Start with some fresh crab.  Add mayo and lemon juice to your liking.
  • Mix this combination to equal parts
  • Take your sticky rice with a piece of nori paper, roll the crab mixture with the rice and nori into a sushi roll.
  • Once rolled tightly, add Ahi, Salmon , Hamachi sashimi on top
  • Finish with Tobiko (flying fish eggs), finely chopped scallions, sesame seeds.

With a little shoyu and wasabi, you will be enjoying a wonderful Rainbow Roll.  I love the idea of making sushi at home, but nothing beats having it made for you with some of Hawaii's freshest island fish!
