Longhis Maui RestaurantLocal Flavors...featuring Longhi's

Maui is known for it's stunning beaches, challenging golf courses, and lush tropical climate, but perhaps its most heavenly treasures are the world class restaurants and inventive cuisine you'll find in every little town across the island. It is my hope to bring to you a variety of recipes courtesy of some of the best chefs on the island.

From the day Bob Longhi opened Longhi's on Front Street in 1976, his restaurant became one of Maui's most popular dining establishments. I remember going to Longhi's as a child, a teenager, and then as an adult. The verbal menu gave way to printed menus, but the food remained the same: excellent. Their award winning dishes offer something for everyone: Maui's fresh fish, prime steaks, or tasty pasta, all complimented by an outstanding wine list.

Since then, the charismatic restauranteur has opened restaurants in Honolulu and in Wailea. I'm thrilled that Roger Hampton at Longhi's Wailea is sharing the recipe of one of my personal favorites: Shrimp Longhi.

Shrimp Longhi
Serves 2

Ingredients

12 large shrimp (1#), rinsed, peeled, and deveined
1/4 cup all purpose flour
3 Tbs. butter
1 Tbs. olive oil
1 cup white wine
1 oz. lemon juice
4-6 Tbs.   cold butter, cut into chunks
1/2 tomato, medium diced
1/4 cup chopped basil

Method

*              Dredge shrimp in flour to lightly coat them, shaking off any excess flour.
* In a saute pan, combine butter and olive oil over medium heat.
* When the butter is foamy, add the shrimp to the pan and saute for 3-5 minutes, until shrimp is cooked.
* Remove shrimp from pan and pour out excess butter. Return the pan to medium heat and deglaze with white wine; reduce for 2-3 minutes and then add lemon juice.
* Reduce liquid by half (approximately 3 minutes). Then stir in the 3 Tbs. of cold butter chunks.
* Add more butter to the sauce 1 Tbs. at a time until the sauce begins to emulsify. The sauce should not be thick, but just coat the back of a spoon. Add tomato and basil. Return the shrimp to the pan for 30 seconds and toss.
